Calcium chloride is a common inorganic salt composed of calcium ions and chloride ions. It appears as a white solid, often in the form of powder, granules or lumps. It is extremely soluble in water, releases heat during dissolution, and exhibits strong hygroscopicity (deliquescence).

In the food industry, food-grade calcium chloride, as a safe and versatile food additive, is widely used in various food processing procedures. It mainly functions as the following types of auxiliaries:

  1. Coagulant and Firming Agent
    Calcium chloride can coagulate soluble pectin into a gel-like insoluble calcium pectate, thus strengthening cell walls and inhibiting the softening of fruits and vegetables.

  • Fruit and vegetable products: Commonly used in canned fruits and vegetables such as tomatoes, apples and strawberries, as well as pickled foods, to maintain the crispness and firmness of the produce and prevent them from turning mushy.

  • Soy products: In the production of tofu, dried tofu and other soy products, calcium chloride can neutralize the charge of soybean protein colloids, making proteins aggregate and gel rapidly.
